Hi, and thank you for visiting with us this week.

FISH

As you can see, the kids got fish at Emmons Fish this week They set up two sort of small aquariums in their bedrooms. I’m proud of the responsibility that they have shown…so far!

In other news this week. Katherine continues to blow me away with her straight “A” report card. It’s so cool to see your children exceed your own capabilities.

For Tommy’s news this week, his dreams have come true; he finally needs the glasses he always wanted. That brings our family up to 5 out of 5 for glasses. I’m pretty sure Dr. Petitti is sending me a Christmas card this year! Also, Tommy finished up the little league regular season with his team the Rockies. Next is play-offs. Good luck!

Johnny, is doing great too. It’s amazing how he has grown into such a unique person this past year. Maybe it’s because his birthday is around the corner, but I’ve taken notice what a big boy he is now. Always helping and making me proud. He also hit me with he wants to start working at Antonio’s now…and for free. I love him!

My wife Lisa had a mouse pee in her car. Now she wants a new one. More on that next week.

SHAYNE'S GHOST PEPPER PIE

Our freshly made dough, hand stretched into a 10 inch circle, and instead of the traditional pizza sauce; we thinly coat with our cheddar cheese sauce infused with ghost peppers. Topped with whole milk mozzarella, sliced pepperoni and sweet Spanish onions before baking in our stone oven. Please note; it’s spicy, kind of like buffalo wings are spicy, (and addictive, like buffalo wings)!


SOLE FLORENTINE

At least a half-pound of sole fillets rolled with a delicious stuffing of spinach leaves and mushrooms accented with fresh garlic nuggets, minced sweet onion, Feta cheese crumbles and a pinch of bread crumbs. Snuggled into their own private casserole and lightly drizzled with dry white wine as well as a squeeze of lemon before being slowly oven baked to order. Accompanied by a side of homemade rice pilaf and a pan sautéed medley of farm fresh yellow Summer squash and zucchini. Accompanied by a soup or a salad and a mini loaf of garlic bread.


CHICKEN CARBONARA

Crisp strips of bacon rendered in a hot skillet and expanded with our simple Alfredo sauce of butter, cream and grated Parmesan cheese. Finished with a large spoonful of spring peas before tossing with 107 of the most delectable fettuccini noodles this side of Florence, and crowning with strips of two plump chicken breasts; chargrilled over an open flame. Accompanied by a soup or a salad and a mini loaf of garlic bread.
